THE AROMA OF ALLIES
Aglianico…??? Me too… I jumped into making this wine on a whim. Knowing near to nothing about the varietal it seemed the perfect way to ensure that I was not consuming too many ham sandwiches.
The fruit is partially de-stemmed and an intuitive 10-15% whole bunches were kept aside to add to the wild ferment as fresh clusters. Left on skins for a fortnight and pressed to seasoned French and American barrique barrels, the wine is then allowed time to go through a natural secondary fermentation. Bottled after a year of barrel ageing this expression of Aglianico is perfectly suited to join the ranks of the ‘Curious Collection’.
Seductive sweet and savoury aromas of jam and toast, black cherries and forest fruits twist temptingly with gushing gamey notes. A fruit forward palate of sweet and sour blue and black berries, ripe plums and Christmas cherries are generously guided along the gullet by gripping tannin and alluring acidity.
The Aroma of Allies is alive now and will show some exciting evolution if allowed to age by the patient punter…
