Someone once asked me if I was a ‘Garagiste Wine Maker’. My response was that I’m more of a ‘Shedonist’.
This wine is dedicated to all the long nights of consumption spent in The Shed (aka The Unicorn Sanctuary) facilitating frothy ferments.
A co-ferment consisting of 30% Viognier and 70% Shiraz is fermented in picking bins for five days before being basket pressed to barrel where the ferment fizzes out. The wine then has a 9 month sojourn in barrel before bottling.
Aromas of dried apricot and lantana blossum cast a spicy spell that’s speared with grapefruit pith and red plum. Soft tannins and youthful acidity dance the length of the palette with a tapestry of red berries and assorted stone fruits.
A vibrant version of Vivacious Viognier held on the shoulders of Shedonistic Shiraz.
