Phantosmia (phantom smell), also known as an olfactory hallucination.
Small parcels of Grenache, Tempranillo and Cabernet are hand picked to co-ferment for this Phantasmical wine. The co-fermentation process allows the three unique varietals to integrate harmoniously whilst still being able to display their own truths. The intention in the creation of this wine is to showcase a lightweight wine with heavyweight complexity.
A telescopic tapestry allows a tri-lens view at these three varietals. Aromas of rich spiced plums are interwoven with sweet cinnamon, herbal notes of cardamom, hints of eucalyptus and some savory gamey characteristics. Fresh red berries and connotations of confectionary are interlaced with a vibrant acidity that dances its way down the length of the palate. The wine is beautifully balanced and offers a generous flirtatious length.
